Lemon Pepper Pan Seared Canadian Salmon

Yields 2 Servings
  • 2 – 8oz portioned salmon
  • 1 cup zucchini seeded, sliced 1” on the base
  • 1 cup squash seeded, sliced 1” on the base
  • ½ of red pepper, julienne cut
  • ½ of poblano pepper, julienne cut
  • ¼ cup olive oil
  • seasoning mix: kosher salt, lemon pepper, crushed red pepper, black pepper
  • 1 lemon cut in half
  1. Rinse and pat dry 2 8oz Salmon Season both sides with of seasoning
  2. Pre heat large sauté pan to med-high/high heat
  3. Pre heat over to 325
  4. Place 2 tbsp. of olive oil in pan
  5. Gently place Salmon Skin side UP
  6. Place cut vegetables next to fish evenly in pan
  7. Squeeze lemon juice on fish and veggies evenly and place lemon on top of fish
  8. Place sauté pan into oven for 10-12 minutes
  9. Remove pan from oven and place vegetables on plate, flip the seared salmon on top of veggies, drizzle olive oil and lemon over dish

 

Healthy Fall Salad

Yields 4 Servings
  • ½ of Iceberg head
  • ½ Romaine lettuce head
  • ¼ bag mixed mesclun salad 
  • 1/8 cup glazed pecans
  • 2 tbsp. sunflower seeds
  • 1/8 cup sun dried cherries or cranberries
  • ½ cup julienne red onion
  • ½ cup grape tomatoes
  • Raspberry vinaigrette to taste

 

Fluffy Whole Wheat Waffles

Yields 8-9 waffles

  • 2 cups whole wheat flour
  • 3 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon turmeric
  • ¼ teaspoon salt
  • 2 large eggs
  • 6 tablespoons unsalted butter melted and slightly cooled
  • 2 tbl brown sugar
  • 1 teaspoon pure vanilla extract
  1. Pre heat waffle maker med-high heat
  2. Whisk flour, baking powder, cinnamon, turmeric and salt in large bowl
  3. Whisk remaining ingredients in a medium bowl until combined
  4. Pour medium bowl into the large bowl of dry ingredients
  5. Whisk until combined with no large clumps
  6. Pour into waffle maker and close the lid until golden brown (5-6 minutes)

Waffle Topping

  • ½ pint blackberries
  • ¼ pint strawberries (cut in ½)
  • ¼ pint blueberries
  1. Mix together in a bowl with ¼ cup of maple syrup
  2. Top waffles with fruit mixture and sprinkle powdered sugar and a drizzle of strawberry or mango syrup
